Our Bite Club campaign has teamed up with Green Lancaster to launch a new project to promote eating in-season vegetables. VP Campaigns & communications Islay Grant launched the Bite Club campaign this year to encourage healthy eating and help students develop the skills to cook and eat together.

Each month Bite Club and Green Lancaster are giving away a different in-season vegetable that can be used as part of a full meal, starting off this month with leeks!

This week the project gave away 150 leeks, along with reusable cool-bags for students to take lunches to uni in and recipe cards to show how to use the vegetable. This month the recipes were pasta carbonara and a leek and potato soup. You can find the recipe cards below if you wanted to make the dishes at home for yourself and your friends, family or flatmates.

Green Lancaster's Bethany Lintern said: “Seasonal eating used to be the norm, and it’s only in recent years that we’ve stopped paying attention to what’s in season. It’s an easy way to be a little more eco as well as a way to switch up the meals you’re having at different times of year.”

Claire Mather, also from Green Lancaster, said: “Eating seasonally can also be a way of eating cheaper as often food that’s in season is more readily available, more locally produced and hence doesn’t have to travel as far.”
